In the heart of Takasaki, there’s a new spot in town called the Ta-machi Silk Market. Enjoy the history and cuisine of this precinct where bars and eateries are nestled side by side.
The owner once ran a restaurant of the same name in the village of Nanmoku. It opened in its current position when the Ta-machi Silk Market precinct was developed.
The chef who is the owner’s wife, loves to cook and her simply-flavored dishes prepared with good quality local ingredients are popular with diners.
The signature dish is tofu cooked in mineral spring water. The tofu loses all but a bit of its original shape when boiled, becoming soft and lightly salted from the minerals in the spring water. It’s nice eaten as-is, or sprinkled with a citrus soy sauce. The dish is popular with women who say that their skin feels better the day after eating it.
